Ingredients

  • 18 to 24 ounces of bread cubes (about 12-14 cups), preferably toasted or stale
  • 1 cup unsalted butter
  • 3 cups diced sweet onion (about 2 large onions)
  • 2 cups diced celery
  • 6 garlic cloves, minced
  • Salt and black pepper (to taste)
  • 3 tablespoons chopped fresh sage
  • 3 tablespoons chopped fresh parsley
  • 3 tablespoons chopped fresh rosemary
  • 2 ½ cups chicken or vegetable stock
  • 2 large eggs
  • Extra fresh herbs for garnish

Instructions

  1. Prepare the Bread: Cut bread into cubes and toast in the oven at 350°F (175°C) for 15 minutes or leave it out overnight to stale.
  2. Preheat the Oven: Set to 350°F (175°C). Grease a 9x13-inch baking dish with butter or nonstick spray.
  3. Cook the Aromatics: In a large skillet, melt butter over medium heat. Add onion, celery, and garlic. Cook for 8-10 minutes until softened.
  4. Add Herbs & Stock: Stir in sage, parsley, and rosemary. Cook for 1 minute. Add 1 cup of stock and mix well.
  5. Combine with Bread: Pour the mixture over the bread cubes and toss to coat evenly.
  6. Mix in Eggs & Stock: In a small bowl, whisk together remaining stock and eggs. Pour over the stuffing mixture and mix well.
  7. Bake: Transfer stuffing to the baking dish and bake uncovered for 45-50 minutes until golden and crispy on top.
  8. Garnish & Serve: Sprinkle with extra fresh herbs and serve warm!

Recipe Notes

  • Make-Ahead Tip: Prepare up to a day ahead and reheat at 350°F for 20 minutes before serving.
  • To Serve 4: Halve the ingredients and bake in an 8x8-inch dish.
  • To Serve 12-18: Double the recipe and bake in a larger 10x15-inch roasting pan.
  • Use Different Bread: Try mixing sourdough, Italian, or French bread for added texture.
