Moroccan Chicken Tagine with Olives and Preserved Lemons:


Ingredients:


1 whole chicken, cut into pieces


2 preserved lemons, quartered


1 large onion, finely chopped


3 garlic cloves, minced


1/2 cup green olives


1/4 cup olive oil


1/2 teaspoon ground ginger


1/2 teaspoon ground cumin


1/2 teaspoon ground turmeric


1/2 teaspoon ground cinnamon


1/2 teaspoon paprika


1/4 teaspoon saffron threads, soaked in warm water


Salt and pepper to taste


1/2 cup water or chicken broth


Fresh cilantro and parsley for garnish



Instructions:


1. In a large pot or traditional tagine, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until soft.



2. Add the chicken pieces to the pot and brown on all sides. Once browned, sprinkle in the ginger, cumin, turmeric, cinnamon, paprika, and saffron-infused water. Season with salt and pepper, then stir everything to coat the chicken evenly.



3. Add the preserved lemons and olives to the pot, then pour in the water or chicken broth. Cover the pot and reduce the heat to low. Let the chicken simmer for about 45 minutes to 1 hour, or until the chicken is fully cooked and tender.



4. Once done, garnish with fresh cilantro and parsley. Serve hot with couscous or fresh bread.
